Fonio Jollof (West African-Style)
A nutrient-rich twist on the classic Jollof, using fonio instead of rice for added texture and health benefits.
Health Benefits:
Fonio is a powerhouse of essential amino acids, making it a complete protein. It’s also rich in fiber, supporting digestion and keeping you fuller for longer. Its low glycemic index makes it a great option for managing blood sugar levels. Additionally, fonio is high in iron, boosting energy and helping to prevent anemia.
Coconut oil adds healthy fats that support brain function and help to absorb fat-soluble vitamins like A, D, E, and K.
Ingredients:
1 cup fonio
2 tbsp coconut oil
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 cup tomato puree
1 tsp smoked paprika
1 tsp thyme
½ tsp cayenne pepper
1½ cups vegetable broth
1 cup mixed vegetables (carrots, peas, etc.)
Salt & pepper to taste
Instructions:
Rinse fonio thoroughly and set aside.
In a pan, heat oil and sauté onions, garlic, and bell peppers until soft and fragrant.
Stir in tomato puree, smoked paprika, thyme, and cayenne pepper, and cook for 5 minutes, allowing the flavours to blend..
Add vegetable broth and bring to a simmer.
Stir in fonio, cover the pan, and cook for 5 minutes until the liquid is absorbed.
Add mixed vegetables, season with salt and pepper, and fluff the fonio with a fork to combine everything.
Serve warm, garnished with fresh herbs like cilantro or parsley for a burst of flavour and colour.

According to legend, fonio was the first grain to grow on the earth, sprouting from the soil when the first rains fell after the dry season. The elders say that fonio embodies the spirit of perseverance and renewal, providing nourishment even in the harshest conditions. Its presence at community feasts symbolises the strength and unity of the people.
