Here’s a simple, nourishing recipe that brings together the resilience of fonio and the vitality of moringa:

Ingredients:

1 cup fonio

2 cups water (or vegetable broth for extra flavor)

1 tbsp moringa powder

1 tbsp olive oil

1/2 cup cooked chickpeas (or any protein of your choice)

1/4 cup chopped spinach (optional)

1/4 cup chopped tomatoes

1/4 avocado, sliced

Fresh herbs (like cilantro or parsley)

Lemon juice and a pinch of salt to taste

Instructions:

Rinse the fonio well under cold water, then cook it in a saucepan with the water (or vegetable broth). Bring it to a boil, then reduce to a simmer for 5-10 minutes until the water is absorbed and the fonio is tender.

In a separate pan, heat the olive oil and sauté your protein (chickpeas, tofu, etc.) with a pinch of salt until crispy and golden.

Once the fonio is cooked, mix in the moringa powder, spinach, and tomatoes. Stir well to combine all the flavors.

Serve the fonio in a bowl, top with avocado, fresh herbs, and the sautéed protein. Drizzle with lemon juice for a refreshing kick.
